FROM THE STILLNESS OF THE VINES TO THE EFFERVESCENCE OF THE CELLAR

In winter, while the vines and the soil rest, the cellar is buzzing with activity!

But what happens in the life of a Crémant de Bourgogne after many months of ageing on lees?

Here are the final steps before our bottles leave Maison Louis Picamelot:

  • Riddling – Gathering the sediment in the bottle’s neck (positioned upside down, known as sur pointe).
  • Disgorging – Removing the accumulated sediment from the neck of the bottle.
  • Dosage – Adding a small amount of liqueur d’expédition (between 0g and 5g of sugar per bottle, depending on the cuvée) to refine the balance of our Crémants de Bourgogne.
  • Corking – Placing the final cork and wire cage to ensure perfect sealing and preserve the finesse of the bubbles.
  • Poignettage – A crucial step to fully integrate the liqueur with the wine.
  • Labelling – Capsule, label, and foil elegantly dress each bottle (stay tuned for a closer look in an upcoming post!).
  • Shipping – Ready to be uncorked for your special moments!

MAISON PICAMELOT FEATURED IN THE BOOK “MIEUX VAUT UN BON CRÉMANT”!

We are delighted to see three of our cuvées (Chazot, Reipes, Espoutières) featured in “Mieux vaut un bon crémant”, the very first book entirely dedicated to Crémants, written by Pierre Guigui, a wine expert with over 35 years of experience.

Former Deputy Editor-in-Chief for wines at Gault&Millau and Collection Director of “Le Savoir Boire” at Apogée publishing, Pierre Guigui is a renowned figure in the wine world. As an author, co-author, and editor of over forty books, he presents here a deep dive into the history, methods, and diversity of Crémants, with a rigorous selection of 311 cuvées from the eight Crémant appellations.

This is a wonderful recognition for our sparkling wines, which are increasingly appreciated for their quality and commitment to more sustainable viticulture.

Located in Talant, on the prestigious Plateau de la Cour du Roy, this iconic plot of exceptional terroir overlooks Dijon, the capital of gastronomy.

🍇 Our new Clos Eudes III cuvée, from its historic first vintage in 2020, is a tribute to Eudes III, the 7th Duke of Burgundy and founder of the city in 1208. This terroir-driven blanc de blancs crémant, made from Chardonnay grafts, reveals the pure expression of its clay-limestone soil: fine bubbles, generous texture, elegant length on the palate, and remarkable aging potential.
